Facility shall wash, rinse and sanitize all kitchen surfaces (storage racks, cooler/freezer door seal gaskets, sides of oven/fryers, cabinets). Observed most kitchen equipment have build-up of food debris or grease.Found dishes under prep counter soiled stored as clean.Observed dining booth seating torn with padding exposed repair. Observed rust on various reach in cooler/freezer shelves recoat/replace shelving. Found broken door seal gasket to the left door of the 2-door prep cooler replace. Found duct tape on the corner of the 3-comp sink Removed.Observed small dish being used to scoop chicken batter.Facility not allowed to cooled while being a CAT II risk. Found container of ham & beans, broccoli soup, bean soup and turkey gravy stored in the 2-door reach in cooler cooled down with no date/time of removal from heat.Observed debris on kitchen floor, especially under, around and behind equipment.Shelves in the utility room by the kitchen have debris buildup. The following equipment had buildup of debris on them: the outside of the hot point fridge especially the door and handle area.Also the whirlpool and gibson freezer and the white chest freezer beside the fryer need cleaned and defrosted. The following equipment had buildup of debris in them: the prep cooler across from the grill line (including the door gasket and the containers holding food on the upper cold holding part of the cooler) the fryer, the microwave across the prep cooler, the toaster across from the grill line, the shaker machine on the shelf across from the grill line, the hot point fridge/freezer, and the true cooler.Observed rusty shelves in the kock equipment.Observed used paper towels and debris stored on clean utensils.Observed staff handling/prepping food without hair restraint.Found food stored in uncovered containers in the prep cooler across from the grill.Manager voluntarily discarded these food items. Observed opened cans of food (corn, pineapple, and corn beef hash) stored in the prep cooler without date labels. ![]()
